Vineyard:
Aurora Crystal is made of pure Chardonnay grapes. The annual production
reaches 1250 and is predicted to reach 2000 in the coming year.

Winemaking and Cellar Practices:
Grape harvest is made by hand, typically the last week of August. Our goal is to pick at maturity level that would provide an optimal sugar level and preserve
the natural acidity and fresh aromas of this grape. The grapes are then squeezecrushed, gently pressed and cold fermented at 18° C in temperature controlled stainless steel tanks and bottled approximately 4 months from the date of harvest.
 
Characteristics:
This wine is characterized by a pale, bright, and clear color. The nose is intense
with typical dry fruit, and discrete notes of flowers that bring a variety of
aromatic herbs and yellow fruit. The attack is thick with dominating fruit notes,
followed by a voluminous mouth feel, and long dry finish. Great paired with light soft cheeses, chicken, fish and sushi.
